Keto Chocolate Chip Cookies

Ingredients:

  • ½ Cup Butter (or vegan butter)
  • 1 Cup Almond Flour
  • 3 tbsp Coconut Flour
  • 1 tsp Baking Soda
  • ½ Cup Granulated Erythritol
  • ½ Cup Shredded Unsweetened Coconut
  • 2 Eggs
  • ½ Cup Sugar-Free Chocolate Chips (plus extra for topping)
  • Flaked Sea Salt (for topping)

Instructions:

  1. Mix softened butter and erythritol with a handheld mixer. Add eggs, then remaining ingredients until dough forms. Chill for 15 minutes.
  2. Preheat oven to 350°F. Scoop dough into 1½-inch balls on a parchment-lined sheet, 2 inches apart. Add extra chocolate chips if desired.
  3. Bake 12-14 minutes until edges are golden. Cool for 5 minutes, then transfer to a wire rack.
  4. Sprinkle with sea salt, serve, and enjoy!
