Keto Chocolate Chip Cookies
Ingredients:
- ½ Cup Butter (or vegan butter)
- 1 Cup Almond Flour
- 3 tbsp Coconut Flour
- 1 tsp Baking Soda
- ½ Cup Granulated Erythritol
- ½ Cup Shredded Unsweetened Coconut
- 2 Eggs
- ½ Cup Sugar-Free Chocolate Chips (plus extra for topping)
- Flaked Sea Salt (for topping)
Instructions:
- Mix softened butter and erythritol with a handheld mixer. Add eggs, then remaining ingredients until dough forms. Chill for 15 minutes.
- Preheat oven to 350°F. Scoop dough into 1½-inch balls on a parchment-lined sheet, 2 inches apart. Add extra chocolate chips if desired.
- Bake 12-14 minutes until edges are golden. Cool for 5 minutes, then transfer to a wire rack.
- Sprinkle with sea salt, serve, and enjoy!
