Ingredients
- ½ cup (113g) unsalted butter
- ½ cup (100g) powdered erythritol
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ cup (90g) sugar-free chocolate chips (optional)
- Optional Toppings: Chopped nuts, sea salt flakes
Steps

Prepare the Pan:
Line an 8×8-inch (20×20 cm) baking pan with parchment paper.

Melt Butter and Sweetener:
In a saucepan, melt the unsalted butter over medium heat. Stir in the powdered erythritol until well combined.

Cook the Toffee:
Continue cooking, stirring frequently, until the mixture thickens and turns light golden (about 250°F or soft-ball stage).

Add Flavorings:
Remove from heat. Stir in vanilla extract and salt.

Pour into Pan:
Pour the toffee mixture into the prepared pan. Spread evenly with a spatula.

Optional Chocolate Drizzle:
Sprinkle sugar-free chocolate chips over the hot toffee. Let them melt, then spread gently if desired. Add optional toppings like chopped nuts or a sprinkle of sea salt.

Let the toffee cool at room temperature or refrigerate for faster setting.

Once firm, lift the toffee using the parchment paper. Slice into squares or desired shapes.
