Keto Cloud Cake Recipe
Ingredients:
For the Cake:
- 2 eggs
- 2 ounces mascarpone or cream cheese
- 20 drops liquid stevia or monk fruit sweetener
- Pinch of salt
- Pinch of cream of tartar (optional)
For the Frosting:
- 2 tablespoons unsalted butter, softened
- 1 ounce cream cheese or mascarpone cheese, softened
- 2 tablespoons powdered sweetener
- ¼ teaspoon instant espresso powder
Instructions:
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Beat yolks with mascarpone, liquid sweetener, and salt. Whip whites with cream of tartar until stiff peaks form. Fold together gently.
- Divide batter into mounds and bake for 25-30 minutes. Let cool.
- Mix frosting ingredients until smooth. Spread on each layer and stack the cake.
